Residence Hall Recipes: Super Bowl Edition

Who is excited about the Super Bowl this Sunday? Honestly, I don’t really know a lot about football but I’ll use any excuse to get together with friends and eat amazing food. Although this Sunday is one of the biggest snacking days of the year, this week’s special edition of Residence Hall Recipes is a great casserole that’s easy to make and very satisfying for a dish that is under $2.25 per serving!

Makes 6 servings.

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients:
1 1/2 pounds ground beef or ground turkey
1 package Taco Seasoning mix
1 can (16 ounces) pinto beans, drained and rinsed
1 can (15 ounces) tomato sauce
1 can (11 ounces) Mexican-style corn or whole kernel corn, drained
1 cup shredded Cheddar cheese (Buy a block and shred it yourself–it’s cheaper!)
1 cup coarsely crushed tortilla chips
Assorted toppings, such as sour cream, sliced green onions, shredded lettuce, chopped tomatoes, and hot sauce (optional).
Directions:

1. Preheat oven to 400°F. Brown meat in large skillet on medium-high heat. Drain fat.

2. Stir in Seasoning Mix, beans, tomato sauce and corn. Bring to boil. Reduce heat to low; simmer 5 minutes. Spoon into 2-quart baking dish. Sprinkle with cheese and tortilla chips.

3. Bake 5 to 10 minutes or until cheese is melted. Serve with assorted toppings, if desired.
